Beetroot, Goats Cheese & Walnut Salad

A warm, healthy & filling salad

This is a new favorite regular in our house now - even my husband will eat just a large bowl of this for dinner! Its a good balance between savory, sweet & tangy, and it's very filling. The fact that it's warm, means it can be served during the colder months too (I personally don't like a cold crunchy salad on a cold day!) 

The dressing is quite sharp, so give it a taste as you go along & maybe add half, then drizzle more over once plated. 

 

Ingredients: (serves 2 - double for larger crowd)

*These measurements are estimates. As this salad is very forgiving, you can adjust them as you wish

Salad:

  • 2 hand-fulls of raw spinach (1 handful per person) - sliced roughly. You can replace this with salad leaves if you prefer
  • Approx. 100g soft mild goats cheese - crumbled
  • 150g-200g cooked Beetroot - chopped (I buy these already cooked, jarred is a good option)
  • 3/4 cup approx 80g chopped raw Walnuts
  • 200g cooked Green Beans (Approx. 1 large handful! I steamed mine & constructed the salad while they were still warm)

Dressing:

  • 2 tbl spoons Olive Oil
  • 1 tbl spoon Balsamic Vinegar 
  • 1/2 tsp Whole Grain Mustard 
  • 1/2 tsp honey
  • Salt & Pepper

Method:

  • Get your greenbeans cooking
  • In a small cup, place Olive Oil, Balsamic Vinegar, Salt Pepper, Mustard & Honey - whisk with a fork & set aside 
  • Place spinich in a large serving bowl (shallow) and chop roughly
  • Top with green beans once cooked, then layer with goats cheese beetroot & walnuts
  • Stir the dressing then evenly drizzle over the salad & serve
