Low Calorie, Butternut Topped Cottage Pie

This is a dish I have been making for years! Everybody loves a comforting Cottage Pie, but some want it without the starchy calories of mashed potato...In comes Butternut Mash! This dish is so tasty, comforting & easy to make - the green peppers give it a real edge in flavor! 

Ingredients:

  • 1 large Butternut Squash - peeled, seeded & chopped into small 1 inch squares
  • 350g ground beef 
  • 1 green pepper - finely chopped
  • 1 pack approx. 125g spring onions - white part chopped (keep green for another dish like salad)
  • 1 large carrot (shredded or chopped finely)
  • Olive Oil
  • Salt & Pepper
  • 1 tsp Worcestershire Sauce
  • 1/2 cup Beef Stock (approx. 120ml)
  • Grated cheese to top (cheddar best; this is optional if you're wanting to keep it super low calorie)

Method: Set Oven 200c

  • In a large pot, bring salted water to the boil - add the butternut chunks & boil while you continue with the below (keep an eye so they don't over softened - about 10-15 minutes) 
  • In another pan, add olive oil, fry your Spring onions, Green pepper & Carrots till lightly brown
  • Add minced beef & season generously with salt & pepper
  • Cook until the beef is browned - add the Worcester sauce & beef stock
  • Simmer for 5 minutes (stirring well)
  • Drain the butternut squash & mash in the pot, keeping back about 1 tbl spoon - add salt & pepper to the squash & stir well - set aside for topping

 Topped with Mashed Butternut Squash & Grated cheese (optional)

  • Place the minced beef mixture into an oven proof dish, then top it with the butternut squash 
  • Top with grated cheese (optional) & bake for approx 20 min - grill for last 3-4 min to brown the top (optional)
  • Serve as is for a healthy nutritious meal
