This dish is so simple but so tasty - it's an easy option for larger dinner parties, or simply just for two on a week night! (I love some good leftovers for lunch the next day) I love the flavor that leaks provide, especially a good accompaniment with chicken. You can use vegetable stock in place of the chicken stock - or even just a cup of boiling water with some extra salt pepper & dried herbs to add some flavor - the purpose of this liquid is so that the veg & chicken don't dry out, it makes a much juicier dish

Ingredients:

  • 1 red pepper (chopped into chunks)
  • 1 red onion (chopped into chunks)
  • 1 leak chopped into thick slices
  • 1/2 butternut (peeled & chopped into small 1cm chunks)
  • 1 cup chicken stock (low salt)
  • 6-8 chicken thigh pieces (skinless & trimmed of any excess fat)
  • 3 large sprigs of fresh rosemary
  • Olive Oil
  • Salt & Pepper

Method: Oven 200c

  • Set oven to 200c
  • In a little olive oil, fry the leaks red onion & red pepper till lightly brown - season with salt & pepper (you just want to release all the flavors before baking everything)
  • In the meantime place your (raw) butternut in a large deep baking dish - and place the chicken thighs inbetween
  • When your leaks onions & peppers are lightly browned, place them on top of the chicken & butternut in the baking dish
  • Season with salt, pepper & evenly pour over the 1 cup of stock
  • Place the sticks of rosemary in-between the vegetables
  • Bake for 40-45 minutes until chicken juices run clear (no blood)
  • Serve on a bed of rice or simply as is for a starch free dinner
