If you're looking for a flavor packed, juicy fish dish - then look no further. This can be a serious crowd pleaser too, easy to serve over rice (I used wholegrain brown rice) with a side of simple steamed veg. I threw this together with what I had at home & did not expect it to be such a winning recipe!! Im sure glad I documented this along the way.

If you can't get Cod, you can easily use any other white fish fillet. I just love the caramelized flavor that red onion gives, and along with the acidic cherry tomatoes, it's winning combination of flavors.

Ingredients: (Serves 2, although the sauce is enough for 4 fillets if needed)

  • 1 tin/canned Italian Cherry Tomatoes 
  • 2 portions of Cod (or any other white fish fillet)
  • 1 red onion (chopped)
  • 10-12 small button mushrooms (sliced. Approx 100g)
  • 1 tsp Thyme (dried)
  • Salt & Pepper to taste
  • Olive Oil
  • 1 Tbl spoon butter
  • Rice to serve (or serve on a bed of steamed Kale to keep starch free)
  • Side of steamed vegetables of your choice 
    • I steamed Broccoli & Cabbage

Method:

  • In a drizzle of olive oil, and 1 tbl sp butter - fry the red onion on medium - high heat. Stir well, to caramelize slowly & not burn
  • Once the onion is browned, add the mushrooms & a little more olive oil
  • Season with salt, pepper & 1/2 the tsp of thyme
  • Once mushrooms are browned, add the tin of cherry tomatoes & stir for 2 minutes
  • Make a 'hole' in the middle & add the fish fillets into the dish - season with more salt, pepper & the other 1/2 tsp thyme
  • Keep the heat at medium - high & flip the fillets after 3-4 minutes, then watch them
  • Stir the sauce around the fish to keep it from sticking, as it is quite thick
  • Once the fillets flake, they are done - don't overcook the fish or it will go rubbery
  • Once fish is flakey, serve immediately on a bed of rice or steamed kale (for starch free option)
