This super simple dinner will not disappoint! It's a starch & carb free meal thats perfect for a healthy dinner. The chicken is so tasty, and the juices from the marinade overflows into the veg while cooking - so you get a flavorful 1 dish dinner! A quick tip: place your foil shiny side down, this prevents the food from sticking while cooking, and makes clean up so much quicker afterwards. If you can marinade the chicken from the night before, then thats the best - but even just 20-30 min before you cook it (while you're prepping the veg) is good enough. I used whatever veg I had at hand, you can do the same (pick 4) but try keep it starch free if you're looking for a super healthy meal

Ingredients:

  • 4 chicken breasts cut into chunks (larger than bite size)
  • 3 tbl sp Soy Sauce
  • 1 tbl sp Honey
  • Salt & Pepper
  • Olive Oil
  • 4 veg of your choice (non starch) I used:
    • 10 Asparagus spears
    • 2 Carrots (peeled & sliced into batons)
    • 10-14 Brussel Sprouts (whole)
    • 10 Broccolini or Brocoli florrets

Method: (Oven 200c)

  • In a medium size bowl, marinade the chicken in the soy sauce, honey, salt & pepper - set aside
  • On a large baking tray (lined with foil, shiny side down) place the vegetables in the four corners (as per pic above) leaving a gap in the middle for the chicken
  • Drizzle the veg with olive oil, sprinkle with salt & pepper, then use your hands to mix & make sure all equally coated & evenly spread out.
  • Place the chicken in the middle, single layer, and pour all marinade over the chicken
  • Bake at 200c for 25-30 minutes until chicken is brown & cooked in the middle, but not dry
  • Dish & Serve immediately!
