Italian Sausage Pesto 'Courgetti'

Vegetable Packed, Gluten Free, Italian Sausage Bowl

This vegetable packed, gluten & starch free dinner is fab for those in need of a super easy, tasty & quick week night dinner. The sausage meat has so much flavor, along with the pesto you don't need to do much more besides throw in all the veg! You can really have a play with it, and use more or less veg - this recipe is super forgiving & flexible. Enjoy!



  • 400g Sausage meat (I used Italian sausage) 
  • 10 asparagus spears, chopped
  • Large handful of kale (stripped off the stem)
  • 5 small mushrooms, chopped up
  • Courgetti (Courgette/Zucchini spiralized to look like spaghetti) 
  • Olive Oil
  • Salt & Pepper
  • Small jar (or fresh tub) of pesto

To finish add cooked courgetti & stir

  • Get your courgetti in the steamer, to cook for adding in main dish at end
  • In a medium size pan, add a little olive oil & start browning the sausage meat
  • Once almost brown, add the mushrooms, kale & asparagus 
  • Stirfry on high until meat browned well & vegetables start to cook
  • Turn down heat to medium & simmer the dish (covered) for 5-8 minutes so the vegetables can cook through. Stir every 2 minutes to cook evenly
  • Remove lid & turn heat up, adding all the pesto - mix well
  • Add the cooked courgetti & mix through
  • Season with salt & pepper
  • Serve hot
