Thai Chicken Cashew Nut Curry

Traditional Thai Chicken Cashew Nut Curry (not spicy)

Another super tasty recipe from Our Mummy Life trip to Thailand - I LOVE Cashew Nuts & the fact that they're dry fried in this dish, means you get all the flavor!! 

Ingredients:

  • Chicken breast strips
  • Cashew Nuts (1 cup)
  • 1/4 cup Dried chili (chopped)
  • 2 spring onions (chopped)
  • 1/2 fresh green chili (chopped)
  • 1/2 fresh red chili (chopped)
  • 1 small onion (chopped into chunks)
  • 1 fresh garlic clove (chopped or crushed)
  • Flour to coat chicken
  • 1.5 tsp Thai Chili paste
  • 2 tsp Soy Sauce
  • 3 tsp oyster Sauce

Method:

  • Coat chicken in flour to prep for frying 
  • Fry chicken (deep or shallow fry - till cooked 5-8 minutes)
  • Set chicken aside on kitchen/paper towel to drain
  • Using same pan, flash fry the cashew nuts & dry chilis (about 30 seconds)
  • Set cashew nuts & dry chilis aside on some kitchen/paper towel
  • In small bowl mix oyster sauce, soy sauce & chili paste
  • In a little oil, fry the garlic, onion, spring onion, fresh green & red chili, with the sauce you just made. 
  • Fry for only 5 min then add chicken, cashews & dried chili to pan
  • Stir all ingredients then serve with rice
  • Stores well in fridge for up to 3 days (reheat well)
