Drumsticks one-dish dinner

One Dish dinner - Chicken drumsticks & veg

This is is so easy & simple, yet super tasty especially when adding peppers. I love a one-tray dinner! Drumsticks are a really flavorful part of the chicken, so don't require too much TLC before baking - just a little seasoning, and they're good to go


  • Chicken Drumsticks (as many as you require - I aim for 2-3 per person, they're great as leftovers)
  • Rosemary (dried. this is optional)
  • Salt & Pepper to season
  • Olive Oil
  • Vegetables of your choice:
    • I used 1/2 red pepper, 1/2 yellow pepper & 15 Asparagus spears halved lengthways 
  • You can easily throw in sliced broccoli, brussels sprouts or whatever you have in your fridge

Method: (Oven 190c)

  • Sprinkle some olive oil onto a large baking tray (lined with foil)
  • Lay down the drumsticks first, leaving a decent gap between them
  • Place the vegetables in & around the drumsticks
  • Season everything with salt & pepper, season only the drumsticks with Rosemary 
  • Bake everything for 30 minutes
  • Remove, flip the drumsticks (stir the veg if you wish) and re-season the drumsticks on the other side
  • Bake for another 15-20 minutes until the drumsticks are cooked through (juice runs clear when cutting into deepest part of chicken.
  • Serve with a side salad, some fresh mozzarella or simply on its own!
