Tomato Bacon Gruyere Tart

A Rich & Tasty Savory Tart

Who doesn't love a crispy warm savory tart?!! This tart is super easy to make, and a real crowd pleaser. It serves 2-3 adults for a dinner, or 4 adults easily for a snack. I served ours for dinner with a simple side salad (Lambs Lettuce/Rocket with avocado). The tart is quite rich, so you don't need a heavy side. 

Ingredients: 

  • 1 sheet puff pastry 
  • 3 medium sized tomatoes 
  • 2 cups grated Gruyere cheese (approx. 125g)
  • Bacon bits (cooked & drained of excess oil)
  • 1 egg (beaten for egg washing)
  • Dried Thyme 
  • Salt & Pepper

Method: Oven 200c

  • Preheat oven to 200c
  • Line a baking tray with parchment paper
  • Spread the puff pastry onto the lined tray
  • Layer with cheese, bacon, tomatoes - leaving 2cm free on edges to fold later
  • Sprinkle with Thyme, Salt & Pepper
  • Fold in the sides double, and squeeze together
  • Baste sides of the pastry with egg
  • Bake at 200c for approx. 20-30 minutes until pastry is golden brown
  • Remove tart from tray by picking up the parchment paper
  • Cut & Serve while warm
