Simple & Tasty way to use leftover Roast Chicken

Want to use up that leftover Roast Chicken you have sitting around? Well this simple Chicken Fried Rice recipe is super quick to make & also really tasty. What's best is most ingredients are from either your freezer or your pantry! 

 

Ingredients:

  • Roast chicken (Leftovers shredded - any amount will do)
  • 1 cup sweetcorn (I used tin/can - its super convenient) 
  • 1 cup frozen peas (if you only have fresh then pre-cook them)
  • Cooked rice (I used 1 pack Uncle Ben's microwave rice)
  • 1 onion chopped
  • 1 tsp crushed garlic
  • 1 tbl sp cooking oil
  • 3 tbl sp Soy Sauce
  • Salt & Pepper to taste

Method:

  • Fry Onions till translucent then add garlic & fry till brown 
  • Add Chicken, Peas & Corn - stir till all heated through (2-3 minutes)
  • Add cooked rice 
  • Add Soy sauce
  • Mix everything around for 2-3 minutes to make sure mixed well & everything heated well through
  • Taste & Season with Salt & Pepper
  • Serve immediately
