Bacon, Spinach & Mushroom stuffed Pumpkin

Its Autumn in Paris & on a cold day I cannot think of anything better than a gorgeous whole baked Pumpkin, stuffed with such tasty ingredients. Bonus is that Pumpkins are high in Vitamins, Minerals & fiber.

I used a medium sized pumpkin (golden nugget to be exact) so that its easier to cook & has more flavor than the huge ones. Here's a picture of the pumpkin before & after prepping:

Ingredients:

  • 1 medium sized pumpkin (when stuffed, cooked & cut, serves 2 adults)
  • 200g pack back bacon, chopped up (less fatty than other cuts)
  • 2 cups spinach (it shrinks a lot)
  • 4 large white button mushrooms (chopped small)
  • Olive oil (to rub pumpkin)
  • Salt & Pepper

Method: (oven 200c non fan assisted)

  • Wash your pumpkin with water to remove any dirt (I eat the skin when cooked)
  • Use a sharp knife & carefully cut open the top of the pumpkin & remove the 'lid'
  • Using your hands, pull out the seeds & stringy bits (I threw them away but you can wash & bake the seeds if you wish)
  • Place Pumpkin on baking tray & rub with olive oil on the outside
  • Sprinkle salt & pepper inside the pumpkin
  • Bake for approx. 30 minutes (depending on size) until the pumpkin is golden & soft when poked with a knife (see pic below)
  • While pumpkin is baking, dry fry the bacon (it creates it own oil)
  • Add the mushrooms till brown
  • Add spinach & once all 3 ingredients are combined & cooked, remove from stove
  • Remove pumpkin & stuff it with the pan ingredients 
  • Place back in the oven at a lower temp of 160c for 20 minutes
  • Remove, cut in half & serve
