Prosciutto wrapped Salmon:

 

Ingredients:

*Salmon steaks (skinless)
*2 slices prosciutto per salmon steak (I used 6 this eve)
*Green beans (topped & tailed)
*Cherry tomatoes (halved lengthways)
*Olive oil (I like to use my garlic infused one for topping vegetables)

Method:

Oven 180*
-Wrap each salmon steak in 2 pieces of prosciutto
-Place in baking dish surrounded by cherry tomatoes & green beans
-Drizzle olive oil over & spice beans & tomatoes (seasoning optional)
-Bake for 10-15 min depending on how you like your fish cooked

Serve with more (steamed) veg if you wish

Beef Chili on Kale

 

 

Ingredients:

*approx 500g Lean beef mince / ground beef
*Chopped onions
*Garlic
*Cumin
*chili flakes
*Salt & Pepper
*2 cans chopped tomatoes (salt free)
*1 can butter beans (drained before use)
*1 can red kidney beans (drained before use)
*kale (steamed to serve) 
*1/4 cup water

Method:

*Brown onions & garlic till onions are translucent. 
*Add ground beef, salt & pepper, stir till cooked. 
*Add 2 cans chopped tomatoes with a pinch of sugar to reduce acidity. 
*add 1/4 cup water. 
*add 1 tsp cumin & half tsp chili flakes
*add both cans beans (drained) & summer for 10-15 min
*add more spices to taste

Serve on bed of steamed kale
