🌟 White Chocolate Covered Ritz 🌟

All you need is:
•Ritz crackers (no substitutes)
•White Chocolate
•Peanut Butter (I make half PB and half Nutella for my son’s peanut allergy) 

Directions:
•Prepare a double boiler with a small amount of water at the bottom
•Place peanut butter or Nutella between two Ritz crackers
•Dunk your cracker with a fork in melted white chocolate and cover on both sides
•Place covered crackers on wax paper or aluminum foil
•Refrigerate for a minimum 1 hour and serve! 

*One bar of melted white chocolate can cover about 15-16 crackers.

Ingredients:

*Red apple

*Nut butter

*Mini marshmallows 


These fun Frozen Banana Pops are so simple to make, and a great alternative to sugery pops

Frozen banana pops

ingredients:

*1 Banana (makes 5-6 pops)

*plain Greek Yogurt

*Honey

*Sprinkles (or coconut/shaved choc)

*Skewer sticks (or simple pop sticks)

method:

*Place chopped banana on end of stick

*dip in greek yogurt then roll in sprinkles

*place in dish on baking paper & freeze for 3-4 hours

*Serve from / store in freezer


These simple bars are healthy, refined sugar & butter free

Muesli Bars (Oven 160c, non fan-assisted)

-Makes 1 std bread loaf tin size-

 

Ingredients:

*1/2 cup Honey

*2 tbl sp Almond Butter (or Peanut Butter)

*1 tsp Vanilla Essence

*Pinch Salt

*1.5 cups Whole Oats

*1/2 cup Coconut (desiccated)

*1/4 cup Pumpkin Seeds

*1/4 cup raw sliced almonds

 

Method:

*Place Oats & Coconut on baking tray & bake for 10 minutes or until slightly browned

*While oats in oven, combine the Honey, Almond Butter, Vanilla & salt on the stove – low heat, stir until combined & smooth

*Remove Oats/Coconut from oven & place in large mixing bowl

*Add in the Pumpkin Seeds & Almonds

*Add Honey mixture & stir well to combine all ingredients

*Place in lined bread loaf tin & press firmly to make sure its compact

*Bake at 160c for 15-20 minutes or until browned

*Remove & let cook slightly before cutting

*Store in airtight container, room temp, for up to 5 days


My home made version of the Reeses Peanut Butter Cups! Delicious & Healthy

Choc Peanut Bites (My take on Reeses Cups)

Ingredients:

*2 ripe, medium bananas

*1 tbl sp Peanut Butter (approx.)

*Dark Chocolate (melted)

 

Method:

 

*Slice bananas thinly, about 1/2cm thick

*Lay the slices on a lined baking tray or plate

*Split them equally, to prepare half to be topped with P Butter

*Top half with Peanut butter & sandwich closed with other halves

*Freeze for 2 hours

*Towards end of the 2 hours of freezing, melt the dark chocolate in the microwave, stirring along the way (don’t burn it, watch it carefully)

*Removed bananas & using a spoon & fork, dip them into the melted chocolate & use the fork to remove excess choc & place them back on the tray

*Continue until all are covered then refreeze for 2 hours

*Serve straight from the freezer – store in airtight container in freezer

These gorgeous fresh Blueberry Muffins are a fabulous anytime snack! 

simple blueberry muffins

Ingredients:

Dry

*1.5 cups all-purpose flour

*½ cup sugar

*½ tsp salt

*2 tsp baking powder

Wet

*1/3 cup oil (unflavored coconut, canola, sesame / any neutral oil works)

*1 large egg

*1/3 cup milk (dairy or non dairy works)

*1 tsp vanilla essence

*1 cup fresh blueberries (you can use frozen too but DO NOT thaw them first, add them frozen just before baking)

 

Method: (oven 200c)

*Mix all dry ingredients into a bowl – stir & set aside

*In a measuring jug, place the oil & egg – then add milk until the 1 cup line (approx. 1.3 cup milk)

*Add vanilla essence

*Whisk with a fork until combined

*Add wet ingredients to dry ingredients & stir slowly, being careful not to overmix or this stops the muffins from becoming light & fluffy

*Add the blueberries & gently stir to combine

*Distribute evenly into muffin cups – I use an ‘easy release ice cream scoop’ so I get the same amount each time & it works well for dough

*Bake for 15-20 minutes until top is brown & a toothpick comes out clean/dry when inserted

Frozen Ba-Nut Bars:

*3 bananas (frozen or fresh)

*1/2 cup peanut butter

*2 tbl spoon honey

method:

*Blend all ingredients

*Place in lined dish

*sprinkle with coconut

*Freeze for atleast 4 hours

*cut into bars & serve

*store in freezer, in sealed container


I love these simple tasty cookies, where the brown Sugar gives a very distinct taste

Brown Sugar Oat Cookies

Ingredients :

*1 cup Flour

*2 cups oats

*1 cup brown sugar

*1 tbl sp Baking Soda

*1 tsp salt

*3 tbl sp oil – coconut/vegetable

*1/4 cup shredded coconut

*2 eggs

*1 tsp vanilla essence

Method: (oven 180c non fan assisted)

*Place all dry ingredients in bowl

*In another bowl mix together wet ingredients

*Add wet to dry & fold together

*Use hands to mix well & place cookie size balls on lined baking sheet/flatten with fingers

*Bake 180c for qpprox 20 min until crunchy on outside

*Let cool & store in airtight container

Egg Muffins: These tasty treats are a super easy breakfast, lunch or snack! 

Ingredients:

*3 eggs (makes 6 muffins)

*Salt & Pepper

*1 tbl spoon milk (This makes the eggs light & fluffy)

*Filling ingredients – anything works, I used cooked sausage, broccoli, cheddar cheese, sliced tomatoes, ¼ red pepper

Method: (Oven 180c non fan assisted)

*Beat eggs while adding salt, pepper & milk – set aside

*If you’re not using a silicone muffin tray, spray or butter the muffin tray to avoid sticking 

*Place fillings in the muffin moulds , mix & match any together

*Pour the beaten egg mixture into muffin moulds, filling the gaps between the ingredients

*Use a spoon to mix/make sure egg is all the way through

*Bake at 180c for approx. 25 min for well-done eggs

*Store in airtight container in fridge for up to 4 days


These super tasty balls taste just like a bite of carrot Cake, without the calories !

ingredients:

*2 large carrots, peeled

*1 cup raw sunflower seeds

*1 cup shredded coconut

*1/2 tsp cinnamon 

*8-10 pitted dates 

*2 tsp honey / syrup

*1 tsp coco powder (optional)

method: 

*Blend carrots then add rest of ingredients

*If too dry add more carrots or dates / too wet add more coconut

*Roll into balls & in coconut

*Store in fridge 4-5 days


These are super tasty & moist, despite the fact that they are Sugar, Oil & Butter FREE! Great for the whole family!

ingredients: (makes 12-14)

 *2.5 cups raw oats  (set aside 1.5 cups for blending)

*2 Large Bananas (Blended smooth)

*2 Large eggs (beaten)

*2 tsp Vanilla Essence

*3/4 cups milk

*1/3 cups honey

*1 tsp cinnamon

*2 tsp Baking Powder

*1/2 tsp Baking Soda (bicarbonate)

*1/2 tsp salt

method: Oven 180c (non fan)

*Place 1.5 cups of the oats (set other cup aside) into a food processor or blender. Pulse until flour like consistency. Set aside in large bowl

* Blend or mash the bananas till smooth

*Add all wet ingredients to banana in a seperate bowl to ground oats

*Add all dry ingredients to the ground oats (including the 1 cup leftover whole oats)

*Add wet ingr to dry ingr & fold till mixed

*let stand for 10 min for oats to absord moisture 

*scoop into muffin tray lined with muffin wrappers 

*Bake 20-25 min 180c non fan assisted / until knife comes out clean when placed in middle

*Store in airtight container. lasts  3-4 days

Healthy alternative to store bought Fruit Gummies. 

Ingredients:
*1 cup desired fruit (**if using berries be sure to strain through sieve after blending)
*3/4 cup water
*2 tbl spoons honey (or syrup)
*2.5 tbl spoons agar agar (vegan) OR gelatin

Method: 
*Blend fruit, water & honey
*Strain through sieve if you used berries
*Bring to boil
*Add agar OR gelatin & REDUCE HEAT simmer
*Stir fast until dissolved & smooth
*Spoon into ice tray or any molds at hand
*Refrigerate for 2 hours / freeze for 45 min till solid. 
*Store in fridge


Delicious frozen treat which you can top with whatever you fancy


3 ingredient healthy coconut balls for kids or adults


Ingredients:
*2 cups desiccated coconut
*8-10 pitted Dates (approx 1/2 cup)
*1.5 tbl sp honey

*4 tbl sp water


Method:
*Blend all ingredients together in nutribullet / food processor
*Add more water if needed
*When a wet sticky texture, squeeze into balls using your hands to mold
*Refrigerate for 30 minutes

*Store in fridge in air tight container & enjoy!

Overnight oats! Simple easy healthy breakfast or snack

Ingredients: (serves 1 breakfast for family of 4)

*1 cup oats                            *1.5 cups unsweetened almond milk (normal milk fine too)       *Toppings of your choice - cut fruit, nuts, seeds, honey

method:

*Mix oats & milk in bowl, stiry with fork                                     *Cover & refrigerate overnight                                       *Top with whatever you wish for breakfast or healthy dessert

 


Easy Healthy Yummy Brownies

Ingredients:

*1 cup apple sauce (unsweetened) 
*1/4 cup coco powder (the more pure the coco powder, the 'darker' & more bitter the brownies taste)
*1/2 cup Almond butter

Method: (oven 180c)

*Mix all ingredients in a bowl. 
*Place in a small lined baking dish
*Bake at 180c for 40-45 min until a toothpick is almost clear when poked into middle of dish
*Put straight in the fridge to cool & harden (this is important) for atleast 3 hours
*Remove from fridge & cut
*Use desired icing to top the brownies if you wish


-No bake granola balls- (Also fab as an on-the-go breakfast!)  Ingredients: 2 cups oats 2 cups coconut flakes 1 cup peanut butter (or any nut butter) 1 cup ground flaxseed 1 cup chocolate chips (dark/milk. *Ziplock bag (1 for each yogurt flavor)
*Any Yogurt (2-3 flavors of your choosing, today I only had peach)
*Parchment paper lined baking tray
Method:
-Place small ziplock bag over a cup
-Spoon in yogurt
-Snip off corner of bag and pipe little 'buttons' onto baking tray
-Place in freezer for atleast 2 hours or until hard
-Lift with a spatula (or serve from spatula if your child has as little patience as mine!)
-Store in air tight container in freezer

ingredients:

1 large sweet potato (peeled) 
Olive oil
Salt

Method:

-Oven 120c
-Thinly slice the sweet potato (I used a mandoline slicer)
-Line the potato slices in a single layer on a baking tray
-Lightly brush each slice with olive oil (I just used a silicone baking spatula) 
-Season evenly with salt
-Bake for 1.5 hours (turning half way) until crispy (I ended up doing 1h45min). 
-Store leftover in an air tight container
