Christmas Spiced Granola (Refined Sugar, Gluten & Dairy Free)

Refined Sugar, Dairy & Gluten Free Christmassy Granola

The smell of this granola will fill your kitchen with Christmas festive scents galore. The Granola is refined sugar, gluten & dairy free - crunchy & delicious, it makes a fabulous gift this Christmas as an anytime snack or with some yogurt for breakfast. Grab some little gift bags, or jars & get creative…

Ingredients:

  • 1 cup whole raw oats (100g) *Use Gluten Free oats if needed

  • 1 cup sliced raw almond flakes (100g) *if you only have whole, just give them a chop until they’re much finer

  • 1/2 cup chopped pecans (50g)

  • 1/2 cup dried cranberries (75g) or raisins if you prefer but I love the tanginess of the cranberries (Set these aside for when baking is complete, only added at end)

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground Ginger

  • 1/4 tsp AllSpice

  • 1/4 cup cold pressed raw coconut oil (60ml) *melted so easy to pour & mix. I use flavoured so it gives a lovely coconut flavour, but unflavoured is fine too

  • 1/4 cup honey (60ml) *or maple syrup works well here too

Method: (Oven 180c)

  • Set oven to 180c & line a large baking tray with baking / parchment paper

  • Roughly chop the 1/2 cup pecan halves

  • In a large bowl, combine the Oats, Almonds & chopped Pecans - mix well with a spoon or fork

  • Add all the spices: Cinnamon, Nutmeg, Ginger & Allspice - mix well

  • Add the melted Coconut Oil & honey, then stir well to fully combine all ingredients

  • Spread out on your lined baking tray, flatten to single layer

  • Bake at 180c for approx 15-18 minutes until golden brown **Watch this carefully as it may brown at 15 minutes. Toss around 8 minutes / half way through cooking

  • Remove & let cool completely until breaking it apart / tossing to separate into clusters

  • Toss in the dried cranberries & mix well

  • Once completely cooled, store in airtight container or package for gifting!
