Christmassy Spiced Roasted Pecans

These gorgeously roasted sweet cinnamony pecans, are a perfect sweet treat. A really easy yet tasty & fun gift idea for the festive season - or simply just bag them all for you & your own family to enjoy! You’ll just loooove the gorgeous smell this leaves in your kitchen for hours after baking…

Ingredients:

  • 1/2 cup white sugar

  • 2 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 1 large egg (to use egg white only)

  • 3 cups (400-450g) Raw / Unsalted Pecan Nuts

Method: (Oven 160c)

  • In a small bowl, mix together the Sugar, Salt, Cinnamon & Nutmeg until wet combined. Set aside.

  • In a different (large) bowl, whisk up the egg white from the large egg - until light & fluffy / bubbly.

  • Add the pecan nuts to the large bowl of egg white, and mix to coat all pecans.

  • Slowly add the sugar mixture to the pecans, stirring as you add in stages to make sure all pecans are equally coated in the sugary mixture.

Spread onto lined baking tray, ready to bake

  • Spread the coated pecans out onto a baking tray (lined with foil) ensuring they are in a single layer, so all are equally baked.

  • Bake at 160c for approx 20-25 min, stirring half way through cooking time. Watch them carefully to make sure they don’t burn, this happens fast.

  • Remove & let cool, they will continue to harden.

  • Once completely cooled, you can package them into little bags with a festive ribbon - or simply in a large air tight container for your own enjoyment!
