4 Ingredient Cinnamon Banana-Cake Oat Cookies with a variation of toppings

These cookies are gluten free and super easy to make as a fun gift idea or just to have for tea time at home! The main ingredients of the cookies contain no refined sugar, so be sure to use super ripe bananas (the more brown spots on the skin the better!) and this will give it lots of natural sweetness. They are quick to whip up, and a fun activity to include your kids in too - especially the part where you add whatever topping you have in your cupboards! *These are not a crunchy cookie but more a banana-cake consistency, dense & moist - my personal fav topping is the Peanut butter & Jam! Enjoy :-)

Ingredients:

Main cookie:

  • 4 very ripe bananas (the riper they are, the sweeter the cookies will be)

  • 2 cups whole rolled, raw oats (use gluten free oats if needed)

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

Topping or stir in ideas: (Use whatever you have in your cupboards here, the options are endless)

  • Desiccated Coconut

  • Pecan nut halves

  • M&Ms

  • Peanut Butter

  • Strawberry Jam

  • Raisins

  • Chocolate Chips or Cacao Nibs

Method: (oven 180c)

  • In a medium size bowl, mash all the bananas with a fork or masher until smooth

  • Add the oats & mix well until all combined

  • Add the cinnamon & vanilla and stir well

  • **Add in any extra ingredients you’d like to mix in now, otherwise skip this step till cookies are on baking sheet, then top

  • Using a tablespoon, place an equal amount of batter onto a parchment lined baking tray - about 1cm apart (they don’t rise or spread)

  • Flatten each cookie with the back of a fork, and top with ingredient of your choice

  • **If you’re doing peanut butter / Jam, make a small dent in the centre of the raw batter, and place the jam or peanut butter (or both) inside the shallow hole before baking (this is my fav option for topping options!)

  • Once you’re done topping or filling your cookies, bake them at 180C for about 15-18 minutes (watch them as this is cookie size / oven dependant)

  • Cookies should be golden brown and firm to the touch in the centre

  • Transfer onto a cooling rack and wait to cool before packaging into gifts or a Tupperware for your family to enjoy
