A super easy gift idea for any occasion 

A simple, classic & tasty Gingerbread Cookie recipe - one I remember from my childhood, the smell filling the house when we baked with my mom. Iv taken our old fashioned recipe & played with it, to get the perfect texture for a crunchy edge, soft middle cookie (YUMMMM!)

Package them in gorgeous little see-through gift bag for the teachers gifts, your neighbors or your friend you want to cheer up. These are not just a Christmas time recipe, thankfully they're fabulous all year round :-) 

Ingredients:

  • 1.5 cups all purpose flour (and an extra few tablespoons for rolling out dough later)
  • 1 teaspoon Bicarbonate of Soda
  • 1 teaspoon Ground Cinnamon 
  • 2 teaspoons Ground Ginger
  • 125g butter
  • 3/4 cup brown sugar (it's important to use brown sugar & not white)
  • 4 tablespoons golden syrup 
  • 1 egg

Method:

  • Sift the Flour, Bicarb, Cinnamon & Ginger into a bowl, then transfer into a food processor or your baking mixer
  • Add your butter & pulse the mixture until crumbly 
  • Stir in the sugar
  • In a small bowl mix the egg & syrup, then add to the mixer and blend till a dough forms

 Stir sugar into dry ingredients & add the wet mixture (egg & syrup)

  • Place the dough in a piece of plastic wrap & refrigerate for 10-15 minutes till firm enough to roll out
  • Prepare a surface to make your gingerbread men (or whatever shapes you wish to use)
  • I taped some baking (parchment) paper to the table for easier cleanup. I then sprinkle flour over the parchment paper 
 Surface ready to cut out our cookie dough, and lined baking trays ready on the side

  • If you find your dough is sticky, sprinkle some flour over while rolling it out, and mix the flour into the dough until it the right consistency 
  • A little sticky makes for more moist (and softer centered) cookies
  • Cut out your shapes & place them on a lined baking sheet
  • Bake for 15 minutes (18-20 if you want them crunchy)
  • Remove & let cool on baking sheet
  • Decorate as you wish, then store in an air tight container or cookie tin
