Gluten Free Coconut-Chocolate, No-Bake Brownies

Gluten & Refined sugar free, super moist decadent Chocolate no-bake Brownies

Who doesn’t love a good old moist chocolate brownie? I do but as you all know by now, I am always refined sugar & gluten conscious where possible…so I had a go at a healthier version & I am thrilled with the outcome!

These brownies are Gluten, Refined Sugar & Dairy FREE! They’re made with Medjool Dates, Pure Cocoa Powder, Desiccated Coconut, Sunflower seeds, dash of honey & coconut oil (I used flavoured to add that extra coconut punch!)

A note on the choice of dates - I suggest buying them whole, and pitting them yourself, it’s quick & easy & you’re then able to keep all the moisture often lost when pre-pitted & packaged

The recipe make for 9 small square rich brownies, but can easily be double for more


Ingredients:

  • 9 large Medjool dates | 180g (Whole. Pit them yourself, its super quick & easy)

  • 1/2 cup | 50g Pure raw Cocoa Powder (no added sugar)

  • 1/4 cup | 25g Desiccated Coconut (extra 1-2 tbl spoons aside for sprinkling at end)

  • 2 tbl spoon | 20g Sunflower seeds (1 tbl spoon aside for sprinkling at end)

  • 1 tsp pure runny honey

  • 2 tbl spoon Coconut Oil (Flavoured best but unflavoured fine too)

  • 2 tbl spoon warm water

Method: (Makes 9 small rich squares)

  • Line a square baking tray or dish with baking non stick paper - set aside

  • Place first 5 ingredients - dates, cocoa powder, coconut, honey & sunflower seeds - in a food processor & pulse until roughly mixed

  • Add last 2 ingredients - Warm Water & Coconut oil - mix until most & almost dough like (see pic below)

  • Press into your lined baking tray / dish (about 1cm thick)

  • Sprinkle with coconut & sunflower seeds & press down lightly to keep in place

  • Place in refrigerator for 1 hour minimum, before cutting into squares

  • Store in an air tight container in the fridge
