Healthy Cinnamon Raisin Cookies

I really wanted a soft everyday cookie which was healthy enough to have for breakfast - so I had a play on a standard Oat Raisin Cookie, and instead used Coconut oil (unflavored) in place of Butter, Honey in place of Sugar, and added a dash of water to the recipe for some fluffiness. Im pretty thrilled at how they turned out!! I warn you though, these are a soft cookie - kind of like a flapjack, and not too sweet at all - this makes them (in my opinion) a healthier option for any time of the day. Give this a go for a healthy everyday cookie that the whole family will love

Ingredients:

  • 2 cups whole oats (1 cup blended 1 cup normal)
  • 1/2 tsp baking soda (bicarbonate of soda)
  • 1/2 tsp cinnamon
  • 1/2 cup raisins (easily substituted with dried cranberries, blueberries or choc chips)
  • 3 tbl spoons unflavored coconut oil (flavored is fine too if you don't mind the taste)
  • 1/3 cup honey
  • 1 egg
  • 1 tbl spoon water
  • 1/2 tsp vanilla essence 
 Combine all dry ingredients (after blending half oats)

Method (oven 180c)

  • Preheat oven to 180c
  • Blend 1 cup of the oats, then add to a bowl & mix (using just a spoon) with the other 1 cup of whole oats, Baking Soda, Cinnamon & Raisins (all dry ingredients)
  • In a new bowl, whisk together the Coconut Oil & Honey
  • Whisk in the 1 egg, Vanilla & Water - and combine well
  • Add wet ingredients to dry ingredients & mix well (using just a spoon or whisk) to form dough
  • Using a spoon or ice cream scoop to scoop a ball onto a lined baking tray - this recipe makes about 10-12 medium size cookies
  • Bake for 18-20 minutes or until brown & firm on the outside
  • Let cool or enjoy when warm & soft
