Apricot Baked Cod:

Ingredients:

Fillet of fish
3 tbl spoon Apricot jam
1/3 cup plain yogurt
1 Fresh lemon squeezed

Method:

Oven 180*
Place fish in oven proof dish - Squeeze lemon over fish
Bake this for about 5 minutes. 
Drain the juice. 

In a bowl mix the yogurt & jam together. 
When fish is drained after 5 min cooking, evenly spread this mixture over the fillets. 
Bake for a further 10 minutes (approx) depends on the size of the fillets. 

Serve over bed of kale with veg on side. 
Serve over rice if you wish, but I avoid starch in the evenings

Easy Chicken Casserole

 

Ingredients:

8-10 chicken pieces (thighs best)
4 stalks celery (chopped)
6 rashers bacon (chopped)
1 tin (400g) chicken soup (low salt if possible)

Recipe:

Oven 180*
Place chicken in oven proof dish. 
Season with salt & pepper. 
Top with chopped celery & bacon. 
Pour the chicken soup over it all. (Use a creamy chicken soup if you wish/not worried about calories)
Bake for 1.1/4 to 1.5 hours till chicken cooked through

Serve with veg
