Baked Tomato pepper chicken
*Chicken pieces skin on (I used 6 thighs)
*Mixed peppers (I used red yellow green)
*1 can chopped tomatoes (low salt)
*Olives (pitted & marinated in garlic advantage)
Method: (Oven 200c)
*Season & Brown both sides of chicken pieces in a pan (just to seal in flavor & crisp skin)
*Transfer to an oven proof dish.
*Top with canned tomatoes, peppers & olives.
*Season with salt & pepper
*Bake for 30 min then spoon liquid in pan, over the chicken.
*Bake for a further 30 minutes or until juices run clear when cut in middle of chicken piece
3 ingredient sausage bean stew
*I used cut up Italian sausage; Chorizo works very well too.
*You can serve this on a bed of steamed kale, spinach or with warm crusty bread. Even just on its own is good.
*Italian sausage OR chorizo
*1 tin chopped tomatoes (low salt)
*1 tin butter beans (or kidney beans)
*Kale to accompany if you wish
*Brown sausage till cooked through.
*Add tomatoes & beans.
*Stir on medium heat for 5 min.
*Season with salt & pepper (to taste)
*Serve on steamed kale, spinach or bread.
