Ground Beef & Veg Stew

 

Ingredients:

*500g ground beef (or turkey) 
*1 onion chopped
*1 tsp mixed herbs
*2 tsp Worcester sauce
*1 tin tomatoes
*3 cups (approx) beef broth
*2 medium potatoes chopped small
*2 cups mixed veg (chopped. Frozen works well, or whatever you have in your fridge)

Method: 

*Brown onions & add beef to brown. 
*Add potatoes, tomatoes, broth, herbs & Worcester sauce. 
*Cook for 10 minutes. 
*Add chopped mixed veg & summer for 15-20 minutes until potatoes & veg are soft. 
*Season with salt & pepper to taste. 
*Serve with bread if you wish (I used a fresh rye bread)

Baked salmon parcels with potatoes

 

Ingredients:

*Fresh Salmon steaks (Skinless)
*Potatoes (chopped very small) 
*Olive Oil
*Balsamic Vinegar
*Dried rosemary
*Salt & Pepper
*Honey

Method: (oven 200c)

*Wash salmon & place on individual. 30cmx30cm foil squares. 
*Cover each steak with 2-3 tbl spoons Balsamic Vinegar. 
*Season with salt & pepper
*Drizzle each steak with 1 tbl spoon honey
*Fold the parcels closed & scrunch tightly on sides to make sure it's completely sealed
*Set aside to marinade till potatoes are done & baked for their first 15 minutes alone. 

*Chop potatoes into small pieces approx 1cm
*Place on baking tray
*Drizzle with Olive Oil
*Season with salt pepper & Rosemary
*Toss to equally distribute the seasoning
*Bake for 15 minutes before adding the salmon to oven for a further 20 minutes together
